Introduction

This recipe is so seventies! Uber easy and inexpensive ingredients. When did you last use raw peanuts I ask you? Be a hit with your kids.

Ingredients

Serves: 4-6

For the Peanut Slice

  • 5 ounces butter
  • ½ cup sugar
  • 1 tablespoon golden syrup or light corn syrup
  • 1 cup flour
  • 1 cup peanuts (raw, whole)
  • ½ teaspoon baking powder
  • 1 cup rice krispies

For the Icing

  • 2 ounces butter
  • 1 tablespoon golden syrup or light corn syrup
  • 4 ounces confectioners' sugar

Method

Retro Peanut Slice is a community recipe submitted by Angeldrawers and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  1. Set oven to 180 C.
  2. Melt the first three ingredients gently in a large pot. Add the flour, peanuts, baking powder and rice bubbles. Place in a well greased slice pan and press down [I use a lasagne dish].
  3. Bake for 15 - 20 minutes. Keep an eye on it so it doesn't over colour on top.
  4. Ice while hot.

To make icing

  1. Heat the icing butter in another pot, add the syrup and then the confectioners' sugar and blend well.

Additional Information

Vary the nuts if desired, try pistachios or walnuts. Don't discard any crumbs from the tray - soften some vanilla ice cream and stir through the broken pieces for your own amazing ice cream creation - buttery, nutty and crunchy all in one!
