Low-Fat Lemon Herb Chicken

When you haven't got time to marinate your chicken or go shopping for fancy spices then this is the perfect recipe! It tastes delicious and is good for any meal whether served as a snacky sandwich or as a fancy entree it is always perfect!


Serves: 4


  • 4 boneless, skinless chicken breast halves 4 ounces each
  • 250 millilitres chicken broth


  • 3 teaspoons lemon juice
  • 3 teaspoons ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons dried herbs (whatever you have on hand)

  • Flatten chicken to 3/8 inches thickness; place in skillet.
  • Add broth, bring to a boil over medium heat.
  • While this is happening mix together the lemon juice, pepper, garlic powder and herbs in a bowl.
  • When you have brought the chicken to a boil, lower heat and simmer for 5 minutes.
  • Turn chicken and sprinkle it with seasoning. Cook for 3- 5 minutes longer or until juices run clear.
  • Garnish according to choice.
