Long before I read about of Coca Cola ham in Ms Lawson's books I had been taught to make Coca Cola duck by an old boyfriend's Chinese mother in Hong Kong. She was a catastrophically bad cook in every area apart from her famous duck. It is possibly the easiest recipe on the planet and with the greatest reward for the least effort - it tastes far more complex and interesting than you could ever dream.

Metric Cups
  • 1 duck
  • 2 cans coca-cola
  • 1 bottle light soy sauce
  • 1 duck

Method

  • Place the duck in a pot where it will fit snugly. Pour over the Coca Cola and the soy sauce.
  • Cover with lid.
  • Set over a medium heat and boil and bubble for about one hour.
  • The duck will be glossy and be surrounded by an incredible dark thick sauce. Good with plain fluffy rice.
