Lowish Fat Clafouti

Introduction

OK! Don't turn up your nose because this is seriously good! It is adapted from an Ian Parmenter recipe. I use fruit in season or failing that tinned peach segments or whatever!

Ingredients

Serves: 6

  • 450 fresh apricots (ripe or slightly overripe - or peaches, pears, cherries etc)
  • 313 skimmed milk
  • 4 tablespoons honey
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 125 sifted all-purpose flour

Method

  • Preheat oven to 180ºC. Spray a 30cm flan dish or baking dish with non stick spray, or just brush with a little oil.
  • Pit/core the fruit and chop into cubes or slices- whatever takes your fancy. Leave cherries whole- your choice to pit or not!
  • Blend the milk, honey, eggs, vanilla and any juice from the fruit. Add the flour and continue to blend for a minute or so until completely smooth. This can be done in a blender, food processor, kitchen aid, handheld beaters, whisk or whatever!
  • Either arrange the fruit in the dish, or add to the bowl- whatever you feel like doing!
  • Pour everything into the pan and bake for around 45 minutes. It should be puffed and browned. Stick a knife in and it should come out clean.
  • Remove from oven and serve either hot or warm. Yum!
