Cherry and Almond Loaf

Introduction

This is simple, but just a little bit more special than an "everyday-style" cherry cake: because of the almonds, it usually turns out nice and moist and keeps quite well.

Ingredients

Serves: 6-8

  • 5 ounces butter
  • 6 ounces superfine sugar
  • 6 ounces self-rising flour
  • 2 ounces almond meal
  • 4 ounces candied cherries
  • 2 eggs
  • milk (a little)

  • Cream butter and sugar till light and fluffy, then beat in eggs, one at a time.
  • Fold in flour, almonds and cherries (halved or quartered, as you prefer). Stir in a little milk if mixture seems dry.
  • Bake in a loaf tin for 75 - 90 minutes at Gas 2 / 150ºC
  • Additional Information

    Rinse and flour the cherries if you like, though I have never found any foolproof method of getting them evenly distributed. If in spite of your efforts they sink, as cherries sometimes do, it still tastes good !
