Ingredients

Metric Cups
  • 150 grams self-raising flour
  • 80 grams desiccated coconut
  • 110 grams caster sugar
  • 125 grams butter (melted)
  • 395 grams condensed milk
  • 125 millilitres lemon juice (fresh, strained)
  • 80 millilitres passionfruit pulp
  • 5 ounces self-rising flour
  • 3 ounces unsweetened shredded coconut
  • 4 ounces superfine sugar
  • 4 ounces butter (melted)
  • 14 ounces sweetened condensed milk
  • 4⅖ fluid ounces lemon juice (fresh, strained)
  • 2⅘ fluid ounces passionfruit pulp

Method

  • Pre-heat oven to 160 deg C (fan) and line a 18cm x 28cm slice pan with baking paper (base and sides).
  • Combine flour, coconut and sugar in a bowl and stir in the butter and mix well.
  • Press into the slice pan and bake for 15 minutes or until evenly browned.
  • Combine the condensed milk, lemon juice and passionfruit pulp and beat until smooth.
  • Pour over the hot base and bake for a further 15 minutes or until just set. Allow to cool in the pan before cutting into slices.
