Lemon Butter Flan

Introduction

I adore this! I think I had it here on the "old" site. Worth repeating.

Ingredients

Serves: 6

  • 1 cup self-rising flour
  • ½ cup superfine sugar
  • 2 ounces butter
  • 1 medium egg
  • 1 cup lemon butter

Method

Lemon Butter Flan is a community recipe submitted by cake_eater and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat oven to 180C brush a 20cm springform pan with butter and line the base with Baking paper.
  • Sift flour into a bowl with sugar rub in the butter. I do all this in my processor.
  • Make a well in the centre and add the egg.
  • Press 2/3of the pastry into the tin. It is difficult so I put on a plastic glove and press it down with my hand, don’t be too fussy.
  • Spread the lemon butter over and then crumble the remaining pastry over it, in little pieces.
  • Bake 30 minutes or until golden. Cool in the tin. Enjoy!

    Someimes I top the pie with dess. coconut!
