This recipe is really easy and you could also make it into a brunch rather. That's what I do when ever we go to the coast for the weekend. You can also halve or double the recipe depending on how many people you are serving.
- 3 large potatoes (scrubbed and peeled, then cut into cubes)
- 1 packet bacon lardons (either smoked or normal)
- 1 large onion (chopped)
- 1 spring onion
- 1 handful fresh parsley (a large handful, or dried parsley if you don't have fresh)
- black pepper (to taste)
- salt (to taste)
- 4 large eggs
- 1 tablespoon extra virgin olive oil
