Potato Breakfast

Introduction

This recipe is really easy and you could also make it into a brunch rather. That's what I do when ever we go to the coast for the weekend. You can also halve or double the recipe depending on how many people you are serving.

Ingredients

Serves: 2-4

  • 3 large potatoes (scrubbed and peeled, then cut into cubes)
  • 1 packet bacon lardons (either smoked or normal)
  • 1 large onion (chopped)
  • 1 spring onion
  • 1 handful fresh parsley (a large handful, or dried parsley if you don't have fresh)
  • black pepper (to taste)
  • salt (to taste)
  • 4 large eggs
  • 1 tablespoon extra virgin olive oil

  • In a large frying pan, fry bacon until crisp, add onion and saute until see through. Add your potato cubes, mix with fried ingredients, cover with a lid until the potatoes are soft but still firm (it's much faster if you just pop them into the microwave for 20 minutes before you start. Use the High setting.) If you are doing this just cover and mix with other fried ingredients for 5 minutes.
  • Then when your potatoes have slightly covered and flavoured add spices. Toss all together.
  • Then GENTLY break four eggs over the potato mixture, in such a way that you can scoop it out after with an egg lifter, DON'T stir.
  • Cover with lid and steam the eggs until they are firm, or the way you like your eggs done. Some people prefer them still soft. Et voila!
