This is one of the tastiest cakes I've ever made and it all sort of happened purely by accident - i'm sure its not the most original recipe in the world and has probably been done before but it tasted good.

Serves: 8

  • 227 grams wholewheat flour
  • 227 grams dark brown sugar
  • 227 grams butter
  • 4 eggs
  • 1 tablespoon cream cheese
  • 1 juice of lemon
  • lemon rind
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • Preheat oven to 190c
  • Sieve the flour into a bowl and tip the remaining bits in after.
  • Sieve the sugar into the bowl.
  • Add baking powder and bicarb.
  • Melt the butter in a microwave or pan and add to bowl.
  • Add the eggs and combine the ingredients well.
  • Stir in the lemon juice and lemon rind.
  • Add the cream cheese, as much as you can get on a spoon and mix it in well.
  • Put mixture in cake tin (I used one of those rectangular rubber ones)
  • Bake in the oven until cooked. When it comes out jab it with skewer and pour some lemon juice over it.
  • Additional Information

I'm sure there is probably a better way of making this cake but the method I've written down is what I did but it really was just a matter of combining everything and bunging it in an oven.
