Over a medium heat add honey and sugar to pot and stir until sugar dissolves. Add seeds and nuts. Continue to stir until mixture is golden. Place mixture onto tray lined with baking paper. Spray hands or spatula with non stick cooking spray* and press down on mixture until flat and tightly packed. While mixture is still warm, slice through into bars. Place in fridge for an hour to cool. Cut again along score lines, remove from tray and store in an airtight container. Keep refrigerated in hot weather. *If you don't use non stick spray, cool hands before pressing.
