Ingredients

Serves: 8

Metric Cups
  • 2 cans chickpeas (drained)
  • 4 medium eggs (beaten)
  • 225 grams caster sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1 orange (rind and juice)
  • 1 teaspoon ground cinnamon
  • 50 grams caster sugar
  • 2 cans garbanzo beans (drained)
  • 4 medium eggs (beaten)
  • 8 ounces superfine sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1 orange (rind and juice)
  • 1 teaspoon ground cinnamon
  • 2 ounces superfine sugar

Method

  • Preheat oven to 180C
  • Rub chickpeas between the palms of your hands to remove skins. Put in food processor and process until smooth.
  • Spoon blended chickpeas into large mixing bowl, stir in eggs, sugar, cinnamon, baking powder, orange rind and juice.
  • Pour mixture into greased and lined 1Lb. loaf tin. Bake in oven for 1-1.5 hrs. or until skewer comes out clean.
  • Remove cake from oven. Leave to stand for 10 minutes. Remove from tin. Sprinkle with cinnamon-sugar. Allow to cool completely before serving.
