Ingredients

Serves: 6

  • 2 cups golden raisins
  • 2 cups raisins
  • 1 cup currants
  • 12 ounces butter
  • 2 cups brown sugar
  • 2 teaspoons baking soda
  • 2 cups water
  • 2 teaspoons nutmeg
  • 2 teaspoons cinnamon
  • 1 dash ground cloves
  • 4 well beaten eggs
  • 2 cups plain whole wheat flour

  • Put the 3 fruits, butter, sugar, carb soda and water in a large pan bring to boil and boil about 5 minutes stirring to dissolve sugar. watch to see it does not froth over the top of the pan. Set aside to cool.
  • Add the spices and eggs folding gently. Then fold in the flour bit by bit until well blended. It is quite a fluid mix. Perhaps this is the secret of the lightness.
  • Grease and paper the tin with baking paper.
  • Cook about 90 minutes at 170C, or until a skewer tests clean. Enjoy.
  • Sometime I use two smaller tins, which means shorter cooking time.
