Basically an Italian quiche that is traditionally made at Easter it is a wonderfully hearty meal that can be eaten warm or cold. (personally I prefer it cold)


Serves: 12

For the Crust

  • 1000 millilitres flour
  • 2 teaspoons salt
  • 3 eggs
  • 188 millilitres water
  • 5 tablespoons crisco (or butter, melted - Crisco is better)

For the Filling

  • 5 eggs
  • ½ kilogram mozzarella
  • ½ kilogram ricotta cheese
  • 1 chopped pepperoni sausage
  • 2 handfuls grated parmesan cheese
  • ¼ kilogram salami (sliced and cut into small pieces)
  • ½ kilogram fennel
  • cooked and sliced pork sausage ( into 1/4 inch slices)
  • ground black pepper
  • 6 hard-boiled eggs

  • Preheat oven to 400 degrees Â
  • Divide the dough in two. Roll into rectangles.
  • Line a rectangular baking pan with half the dough.
  • Fill and arrange whole hard boiled eggs evenly in filling then cover with remaining rolled dough.
  • Crimp edges and brush with egg wash.
  • Bake until top is golden brown. Can be served either hot or cold.
