Ingredients

Serves: 4 people

Metric Cups
  • 500 grams plain flour
  • 150 millilitres water
  • 70 grams caster sugar
  • 2 eggs
  • 50 grams yeast
  • 215 grams butter
  • 1 pinch of salt
  • 300 grams pearl sugar
  • 18 ounces all-purpose flour
  • 5¼ fluid ounces water
  • 2 ounces superfine sugar
  • 2 eggs
  • 2 ounces yeast
  • 8 ounces butter
  • 1 pinch of salt
  • 11 ounces pearl sugar

Method

  • Knead the 300 gr flour, water, sugar, eggs, 15 gr. butter.
  • Cover with the 200 gr flour and let it rest for 15 min. (30 min. if possible)
  • Knead again and add the 200 gr. butter and the salt.
  • When kneaded thoroughly, add the pearl sugar.
  • Divide the dough in parts of approx. 100 gr. Let it rise for half an hour under a kitchen towel.
  • Heat the waffle-iron on a medium-high heat and bake.
  • Knead the 300 gr flour, water, sugar, eggs, 15 gr. butter.
