Introduction

I needed to find a way to use leftover Italian Sausages with Lentils, and this was the result. My family really looks forward to this.

Ingredients

Serves: 5

  • 2 cups lentils
  • 1 italian sausages
  • 1 small onion
  • 1 clove garlic
  • 1 stick celery
  • 1 tablespoon olive oil
  • 6 cups beef broth
  • 2 carrots
  • 3 bay leaves

  • Dice the onion, garlic, and celery and add to a large pot with the olive oil.
  • Heat together for a few minutes until soft and fragrant.
  • Add the beef broth, sliced carrot, and bay leaves and simmer for about an hour.
  • Cut sausage into small bite-sized pieces and add to the pot with the lentils.
  • Simmer for another 20 to 30 minutes until hot.
  • Additional Information

    Taste the broth after you add the lentils and sausage; you may want to add some additional water if it is too strong and thick.
