Tomato Bliss

Introduction

This is a recipe I knocked together from tangling with a similar recipe. Both are wonderful but I think my one is excellent for a warming dinner, and it is also nourishing for children and low in fat for adults. Enjoy :)

Ingredients

Serves: 4

  • 1 can crushed tomato
  • 10 butter
  • 1 medium chopped onion
  • 3 cloves crushed garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon all-purpose flour
  • 1 cup water
  • 1 tablespoon Italian mixed herbs
  • 1 teaspoon sugar
  • 2 teaspoons olive oil
  • 1 teaspoon chopped fresh thyme
  • 5 tablespoons cream (low-fat, optional - if you dont use it, use 1 extra tablespoon of flour)
  • 1 tablespoon pesto (for serving)
  • turkish bread (or any good, fresh bread for dipping in)

Method

  • Peel the garlic and onions and chop roughly then put in saucepan with water and Italian mixed herbs and cook on high.
  • Add can of tomatoes, sugar, ginger, oil, flour and stir until combined. Simmer on a low heat, gradually stir in cream and thyme.
  • Then blend the mixture until it is a creamy texture (if you prefer you can leave it chunky).
  • If the soup is cold by now reheat it and when hot stir in thyme and pesto.
  • Serve with hunk of Turkish bread toast.
  • Suitable for freezing.
