Bread Pudding

Introduction

As promised here goes.... The perfect dessert for Passover dinner. Don't be put off by the length of ingredients, it's the work of minutes.

Ingredients

Serves: 6

  • 4 matzos (broken into small pieces)
  • 1 apple (peeled, cored and grated)
  • 85 grams raisins
  • 57 grams dried apricots
  • 57 grams chopped and toasted skinned almonds
  • 85 grams superfine sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon grated nutmeg
  • 1 tablespoon honey
  • 1 orange (grated zest and juice)
  • 3 eggs
  • 3 tablespoons matzo meal
  • 85 grams pareve margarine
  • 1 tablespoon superfine sugar
  • 2 tablespoons marmalade (or apricot jam)

Method

  • Put broken matzos in a bowl, cover with cold water and steep for 10 minutes. Drain and mash with a fork.
  • Preheat oven to 180 C/350 F. Grease an 8/9 inch square baking dish, or thereabouts. I use oblong! To mashed matzos add apple, raisins, apricots, nuts. Mix well.
  • Then add half the sugar and cinnamon, nutmeg, honey, lemon zest and juice. Mix again. Beat eggs with remaining sugar for a few mins til creamy and sugar disolved. Stir in melted margerine and scrape into baking dish.
  • Level out and scatter over the 1tbs of sugar. Bake until a knife inserted in the center comes out clean and top is browned and slightly puffed (1hr).
  • Once baked melt marmalade or jam in a pan and brush over pudding (optional) to glaze and leave to cool. Serve hot with cream, room temp with tea, cold as a midnight snack!
