Our answer

Nigella's Easy Sticky Toffee Pudding (from NIGELLA BITES) is a self-saucing sponge pudding. The sugar and hot water poured over the cake batter before baking emerges as a rich sauce underneath the sponge once the pudding has been baked.

You should use a baking dish with an approximate 1.5 litre/6-cup capacity. If you were to double the quanitities in the recipe then you would need to use a large roasting tin and we think that you may find it difficult to bake the pudding evenly in such a large tin. If you need to feed a larger number of people then we would suggest instead that you make two puddings. Double the batter ingredients and split the batter equally between two square dishes approximately 20x20cm/8x8 inches, add the sugar and hot water on top and then bake following the recipe instructions. You can usually buy aluminium disposable dishes in this size and a 23x23cm/9x9 inches square dish would also work if you are unable to find the smaller size.
