Line the base of a deep pan with aluminium foil, shiny side up. Be sure to cover the whole pan or it will ruin. Mix all dry ingredients together, sprinkle onto aluminium foil. Place another sheet of aluminium foil over the tea mixture, shiny side down. Place duck breasts on foil. Drizzle with honey. Cover with a lid and cook for 8 minutes for pink duck meat. Rest as normal.
A different way of cooking duck to give it warm smokey flavour.

- 2 ounces rice (any variety)
- 2 ounces brown sugar
- 1 ounce tea leaves (emptied tea bags will suffice)
- 1 tablespoon runny honey
