Super Fast Post-Gym Stir Fry

Introduction

This is a super quick, crunchy stir fry that I knock up within a minutes of getting home from the gym. If I was really organised, I'd get the vegetable chopping done before I went, but I'm not.

Ingredients

Serves: 2 hungry people

  • 1 tablespoon groundnut oil (or other vegetable oil)
  • 2 chicken breasts (chopped, optional - I've made this with just vegetables)
  • 2 cloves garlic
  • fresh ginger (thumb-sized piece)
  • 1 red onion (sliced into half moons)
  • 2 carrots (cut into batons)
  • 2 red peppers (or yellow or orange, cut into strips)
  • 1 tablespoon sweet chilli sauce (or more if you like it)
  • 1 lime (juice of)
  • 1 handful fresh coriander
  • noodles (I love brown rice udon noodles)

  • Do all preparation in advance. The wok needs to be hot and the ingredients need to keep moving. No time for stopping here.
  • Boil the kettle and put the noodles on - if using brown rice udon, they'll take about the same time to cook as the stir fry so put them on just before putting the chicken into the pan.
  • Add the oil to the wok on a high heat When hot and ready to sizzle add the chicken breasts and stir for about 5-8 minutes until the chicken is more or less cooked.
  • Add the grated garlic and ginger and stir to coat the chicken (it is vital to keep things moving once the garlic and ginger goes in so they don't burn)
  • Add the carrots pretty much immediately After about 1-2 minutes add the onion After about 1-2 minutes add the peppers About 2 minutes later drain the noodles and add them to the pan
  • Add the sweet chilli sauce, soy sauce and lime juice Give everything a good toss and taste to see if you want a little extra sweet chilli or soy. Eat while it's fresh and hot.
  • Additional Information

    This can be easily made with any combination of vegetables or leave out the chicken to make a vegetarian or vegan meal.
