Last Meal Candidate - Baked Cheesecake

Introduction

This is just so delicious, you have to make it and I know you will love it. I warn you though it is something you will not be able to leave alone once you've tasted it. Seriously, you have been warned! No fruit topping or anything else necessary.

Ingredients

Serves: 6

For the Base

  • 1 packet buttery biscuits
  • 5 ounces unsalted butter

For the Top

  • 3 cups mascarpone cheese
  • 1 cup granulated sugar
  • 1 cup creme fraiche
  • 3 large eggs
  • 1 tablespoon custard powder
  • 3 teaspoons cornstarch (or potato flour)

Method

Base:

  • melt the butter, crush the biscuits and incorporate the butter into the biscuits. Press into a lined cake tin to form the base. Press hard to make sure you form a good solid foundation!
  • Top:

  • cream together the eggs and sugar until smooth add Mascarpone and Crème fraîche add custard powder and flour
  • Pour mixture on top of the base Bake at 150° for 25 minutes
  • Take out of the oven and allow to cool
  • Place in the fridge for at least 4 hours prior to eating (I mean it!)
  • Then take the phone off the hook, lock yourself somewhere safe, and go back to the fridge wielding a fork!
