Introduction

My father developed this recipe for his restaurant back when grasshopper pie was big. It is best served frozen. Hope you enjoy it!

Ingredients

Serves: 8-10

For the Chocolate Wafer Cookies, Unsalted Butter

  • 9 boxes chocolate wafer cookies
  • 3 tablespoons unsalted butter

For the Marshmallows, Milk, Creme De Cacao, Brandy, Heavy Cream

  • 16 large marshmallows
  • 250 millilitres milk
  • 250 millilitres creme de cacao
  • 250 millilitres brandy
  • 2750 millilitres heavy cream

  • Process the wafers in a processor till crumbled
  • Add the melted butter until combined
  • Press into pie plate and set aside
  • Gently melt marshmallows and milk together in a double boiler
  • Add creme de cacao and brandy and wisk together till smooth
  • Pour into large bowl and let cool
  • Whip heavy cream to soft peaks
  • Fold into marshmallow mixture until combined
  • Pour into the crust, cover and put in freezer for 2 hours
  • Enjoy!
