  • 4 chicken breasts
  • breadcrumbs
  • 1 medium egg (for crumbs to stick)
  • 1 clove garlic (chopped)
  • fresh herbs (finely chopped)
  • oil (for frying)

Method

  • Chop garlic and add with herbs to breadcrumbs place on a plate.
  • Beat egg place in a bowl.
  • Take a chicken breast and dip into egg, then place chicken breast into breadcrumbs to coat evenly. Repeat with all breasts.
  • Heat oil in pan to shallow fry. When hot, add chicken breasts and fry until golden on both sides.
  • Pre heat oven to 200 degrees, place chicken on a grill tray so oil can drip out while cooking. Cook in oven for 20 mins or until chicken inside is completely white and piping hot.
  • serve immediately with potato wedges, chips or roasts and a salad.
