Easy Date and Nut Bread

Introduction

This was the very first thing I learned to bake...my aunt taught me this because it was so easy. No beating, no whipping...just mix and you're ready to go!

Ingredients

Serves:

  • 1 cup sugar
  • ⅓ cup chopped dates
  • 1 cup flour
  • 1 teaspoon baking soda
  • ⅓ cup chopped walnuts
  • 1½ tablespoons butter
  • 1 large egg
  • ¾ cup boiling water
  • 1 teaspoon vanilla

  • Mix the flour, sugar, butter, nuts, baking soda in a bowl
  • Add water to make a thickish batter
  • Add the beaten egg and vanilla
  • Bake for half an hour or till skewers come out clean

    This bread is best made a day in advance to give the flavours a chance to blend. Add a tsp of rum or brandy if you like the flavour.
