Introduction

So much better than brandy butter or custard - thick, luxurious and delicious

Ingredients

Serves: 4

  • 3 ounces butter
  • 4 ounces confectioners' sugar
  • 1 medium beaten egg
  • 2 ounces almond meal
  • 3 tablespoons brandy
  • 3 tablespoons whipped cream

Method

  • Beat the butter, add the confectioners' sugar and mix well
  • Add the beaten egg and stir in a bain marie for a few minutes - be careful not to overheat at this stage
  • Remove from heat and add almond meal and brandy
  • Fold in whipped cream
