Overnight French Toast

Beat all ingredients until foamy and airy. Pour this batter over sliced brioche or bread and soak overnight before grilling or shallow-frying for breakfast. NB You can fry briefly and then finish off the cooking by baking the toast in a really hot oven. The batter puffs up and becomes quite airy.
Introduction
The trick here is to soak the bread in the batter overnight.

Ingredients
Serves: 2-4
- 2 eggs
- 2 egg whites
- ⅓ cup granulated sugar
- 2 grated zest of lemons (or oranges)
- 1 pinch of salt
- 2 cups milk
- 2 tablespoons freshly ground rum
- nutmeg
