Overnight French Toast

The trick here is to soak the bread in the batter overnight.


Serves: 2-4

  • 2 eggs
  • 2 egg whites
  • ⅓ cup granulated sugar
  • 2 grated zest of lemons (or oranges)
  • 1 pinch of salt
  • 2 cups milk
  • 2 tablespoons freshly ground rum

  • Pour this batter over sliced brioche or bread and soak overnight before grilling or shallow-frying for breakfast.
  • NB You can fry briefly and then finish off the cooking by baking the toast in a really hot oven. The batter puffs up and becomes quite airy.
