Scrambled Up Scotch Eggs

Hard boil eggs,cool, chop finely. "Cream" the sausage meat with a fork till soft in a big bowl. Add chopped egg and grated cheese, ketchup, s&p mix together using slightly dampened hands roll pieces into walnut sized balls. Roll into seasoned flour and then deep fry them ,turning to evenly cook them-don't overcrowd.
Introduction
Good for nibbles or buffet/party/lunch box.

Serves: 6-8
- 3 hard-boiled eggs
- 3 ounces mature cheddar
- 2 tablespoons tomato ketchup
- 1 pound sausagemeat
- 2 tablespoons finely chopped onions
- salt
- pepper
- flour (to roll)
