Ingredients

Serves: Roughly 12 slices

Metric Cups
  • 175 grams butter
  • 500 grams plain flour
  • 500 grams currants
  • 250 grams raisins
  • 250 grams soft brown sugar
  • ¼ litre milk (warmed)
  • 1 teaspoon bicarbonate of soda (level)
  • 3 tablespoons malt vinegar
  • 6 ounces butter
  • 18 ounces all-purpose flour
  • 18 ounces currants
  • 9 ounces raisins
  • 9 ounces soft brown sugar
  • ½ pint milk (warmed)
  • 1 teaspoon baking soda (level)
  • 3 tablespoons malt vinegar

  • Gas3 160c 325f 8"greased and lined tin
  • Rub fat into flour
  • Stir in fruit and sugar
  • Pour warmed milk into a well in bowl.
  • Sprinkle bicarb in and vinegar
  • Quickly mix together while it is foaming
  • Bake approx 2 1/2 hours.
