Takes no time to make, and is lovely home made yummy (well, I think so). I serve it as a meal, with some bread and olive oil (or butter).

Ingredients

Serves: 4

Metric Cups
  • 1 kilogram tomatoes
  • 300 grams any vegetables (mixed)
  • 1 onion
  • 1 clove garlic
  • 1 olive oil
  • 2 vegetable stock cubes
  • 150 grams sausagemeat
  • 1 pepper
  • 2⅕ pounds tomatoes
  • 10⅗ ounces any vegetables (mixed)

  • 5⅓ ounces sausagemeat

Method

  • Slice the onion and the garlic, fry them in some olive oil on a low fire. Add the mixed veggies.
  • Slice up the tomatoes in chunks, add them as well. Add enough boiling water to cover all the ingredients.
  • Add one or two stock cubes (be careful, to much stock cubes will mean you won't taste the tomatoes). Bring to the boil.
  • Make little balls of the sausage filling (I cover them with dried breadcrumbs) and put them in the steamer section of my pan above the boiling broth. After about 10 minutes, check if the veggies are done.
  • Blitz the soup with the Magimix, check if it's not too dense, if it is, add water. Add the steamed sausage filling balls.
  • Check if s&p is needed. Serve steaming hot!
