Ginger Lemon Chicken With White Rice

I came up with this recipe because my mom loves ginger. It was a big success at home!

Ingredients

Serves: 4-6

  • 4 diced chicken breasts
  • 3 tablespoons butter
  • 1 tablespoon ginger paste
  • 2 lemons (juiced)
  • 2 teaspoons garlic powder
  • 2 tablespoons thinly sliced fresh gingerroot
  • 2 tablespoons thinly sliced garlic
  • salt (to taste)
  • pepper (to taste)
  • 500 millilitres white rice
  • 1000 millilitres water
  • roasted cashew nuts ( to decorate)

Method

  • Mix lemon juice with garlic powder and ginger paste. Marinate the cubed chicken in the lemon juice mixture as long as possible (min. 1 hour, up to 1 day).
  • Take the chicken out of the lemon, and keep the lemon on the side.
  • Fry the chicken in butter on high for a few minutes till it gets white, and then lower the heat and keep them cooking till they are done, around 20 minutes.
  • While this is cooking make the white rice on the side using 2 cups rice to 4 cups water.
  • Add the garlic and ginger slices to the chicken and cook till they are soft. Add the lemon mixture, and cook for 3-4 more minutes. Add salt and pepper to taste.
  • Serve the chicken with the sauce on white rice. You can serve with roasted cashew nuts if desired.
