Jamaican Coconut bread

Ingredients

  • 1½ cups strong white bread flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup sugar
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • ½ milk
  • ½ cup unsweetened shredded coconut

Method

  • Preheat oven to 180
  • In bowl combine the flour ,baking powder, salt and sugar. Add the egg and vanilla extract and mix. Then add milk and coconut, mix well.
  • Pop into greased loaf tin and bake for 1 hour or until bread is springy to the touch, or skewer comes out clean.
  • Leave to cool slightly in the tin, then remove from tin and allow to cool completely......This stuff is great toasted and smothered in pineapple jam. J x
