Chocolate Chip Cheesecake

Introduction

This has been an easy and reliable cheesecake for me.

Ingredients

Serves: 8

  • 1½ cups finely crushed chocolate biscuits (oreo)
  • 3 tablespoons melted butter
  • 8 ounces softened cream cheese
  • 14 ounces sweetened condensed milk
  • 3 medium eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips
  • 1 teaspoon flour

Method

  • Preheat oven to 300 degrees F. Combine cookie crumbs and butter; press firmly on bottom of 9in springform pan.
  • In large mixing bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and vanilla; mix well.
  • In a small bowl, toss 1/2 Cup mini chips with flour to coat and then stir into cheese mixture. Pour into prepared pan.
  • Sprinkle remaining 1/2 Cup chips evenly over top. Bake 1 hour or until cake springs back when lightly touched.
  • Cool to room temperature. Chill thoroughly.
  • Additional Information

    Cheesecake may be garnished with drizzled melted chocolate, or pureed raspberry- any way you like.
