SPICE FLAVOURED CHRISTMAS CAKE/BISCUIT

Ingredients

Serves: 12

Metric Cups
  • 4 medium eggs
  • 250 grams sugar
  • 250 grams ground almonds
  • 250 grams ground hazelnuts
  • 250 grams candied lemon peel (chopped into small pieces)
  • 200 grams candied orange peel
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg (grated)
  • 1 teaspoon cinnamon
  • 1 lemon (grated)
  • 1 sprinkling of icing sugar (for glaze)
  • 1 splash of lemon juice (for glaze)

  • 9 ounces sugar
  • 9 ounces almond meal
  • 9 ounces hazelnut meal
  • 9 ounces candied lemon peel (chopped into small pieces)
  • 7 ounces candied orange peel
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg (grated)
  • 1 teaspoon cinnamon
  • 1 lemon (grated)
  • 1 sprinkling of confectioners' sugar (for glaze)
  • 1 splash of lemon juice (for glaze)

Method

  • Beat eggs and sugar until frothy. then stir in the rest of the ingredients.
  • Spread fairly thickly onto oblaten bases.(these are sold in packets in Europe, made of rice flour I think)
  • Smooth over the top as much as possible. B
  • ake at 150degrees for 25 - 30 mins. Glaze with lemon icing (fairly runny). Chocolate icing is another option.
