Bourbon Mint Ice Cream

Introduction

I love the taste of bourbon in cream. This recipe is an old one from a plantation in the deep south.

Ingredients

Serves: a tub

  • 500 millilitres milk
  • 63 millilitres bourbon
  • 2 tablespoons chopped fresh mint
  • 3 eggs
  • 250 millilitres superfine sugar
  • ½ teaspoon salt
  • 375 millilitres cream
  • 1½ teaspoons vanilla extract

Method

  • Place milk, bourbon, and mint in a saucepan and bring to the boil. Beat the eggs and sugar until yellow.
  • Pour into a little hot milk to heat it, then pour egg mixture into warm milk stirring all the while.
  • Return to low heat and cook stirring constantly for 10 minutes or until mixture coats spoon. Strain and cool, then refrigerate.
  • Stir in cream and vanilla, and pour mixture into your ice cream maker. Freeze in container.
