The Chicken Dish

Introduction

I have been making this dish since I was 12 and everybody who comes across it LOVES it. I use to make it for my little brother and sister who are 9 and 10 yrs younger than me and always ask me to make it when I come home.

Ingredients

Serves: Maybe 8

  • bbq chicken
  • 1 tablespoon olive oil
  • 1 whole red bell pepper (or green)
  • 1 medium onion
  • 2 cloves garlic
  • 1 tub sour cream
  • 2 cups chicken broth
  • salt
  • pepper
  • pasta (spirals or bow ties)
  • gram cheese

  • Pull apart the BBQ chicken
  • Dice the onion and crush the garlic cut the capsicum into strips
  • Heat the oil in a pan over medium heat and cook onion, garlic and capsicum until just soft. Add chicken and stir through until heated. Add the sour cream and stock. (make sure you mix the sour cream around so it becomes smooth and creamy before adding it to the pan other wise it will look as though it has separated, although it will come together at the end regardless)Simmer for a couple of minutes.
  • Cook pasta in boiling water until aldente.
  • Line the baking dish with pasta and poor chicken mixture on top and sprinkle cheese on top.
  • Bake in a hot oven until cheese melts.
