Ingredients

Metric Cups
  • 2 tablespoons olive oil
  • 4 rashers bacon (chopped)
  • 3 sticks celery (thinly sliced)
  • 1 teaspoon ground coriander
  • 3 large potatoes (peeled and cubed)
  • 1 litre vegetable stock
  • 1 large leek (thinly sliced)
  • 2 tablespoons olive oil

  • 1⅘ pints vegetable broth
  • 1 large leek (thinly sliced)

Method

  • Heat oil in large pan over medium heat. Add bacon, celery, leek and coriander. Cook, stirring, for 3 minutes until bacon is cooked.
  • Add potatoes. Cook, stirring, for one minute. Blend in stock. Bring to the boil over a high heat.
  • Reduce heat to medium. Simmer covered for 10 to 15 minutes or until potatoes are tender.
  • Puree until smooth with a blender.

    • I really loved this soup! It was a simple, effective recipe and it tasted great. The only change I made is that I left some of the bacon bits and potato out of blender and then added them in later so that I could have a chunky soup instead of a totally smooth one :-)
