Ingredients

Serves: 6

Metric Cups

For the Cake

  • 300 grams sugar
  • 4 medium eggs
  • 250 grams flour
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • 200 millilitres milk
  • 50 grams butter

For the Topping

  • 125 grams butter
  • 100 grams desiccated coconut
  • 250 grams light brown muscovado sugar
  • 50 millilitres milk

For the Cake

  • 11 ounces sugar
  • 4 medium eggs
  • 9 ounces flour
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • 7 fluid ounces milk
  • 2 ounces butter

For the Topping

  • 4 ounces butter
  • 4 ounces unsweetened shredded coconut
  • 9 ounces light brown sugar
  • 1¾ fluid ounces milk

Method

  • Whisk eggs and sugar over a pan of boiling water till it thickens.
  • Sift flour, baking powder and vanilla sugar together and fold it carefully into the egg/sugar mixture.
  • Heat milk and butter together and mix into the batter, pour into a small baking tray (lined with baking paper).
  • Bake in the middle of the oven at 200 C for about 20 minutes.
  • Topping:

  • Mix the ingredients together in a pan.
  • Immediately after the cake has baked, pour the topping over and bake for 5-10 minutes at 225 C.
