A dessert we had on holidays in Sweden when I was a child. It is very easy, but a rather rich dessert. Serve with (blueberry)jam and lightly whipped cream.

Ingredients

Serves: 6

Metric Cups
  • 50 grams almonds
  • 4 eggs
  • 50 millilitres sugar
  • 50 millilitres flour
  • 400 grams cottage cheese
  • 300 millilitres whipping cream
  • 2 ounces almonds
  • 4 eggs
  • 1¾ fluid ounce sugar
  • 1¾ fluid ounce flour
  • 14 ounces cottage cheese
  • 10½ fluid ounce heavy cream

Method

  • Skin the almonds and chop finely.
  • Whisk eggs and sugar. Add flour and cottage cheese.
  • Whip the cream and add to the batter along with the chopped almonds.
  • Pour into an ovenproof dish and bake in a 200 degrees C hot oven until no longer wobbly. If it takes colour too quickly, cover with a piece of tin-foil.
