  • 600 millilitres white wine vinegar
  • 12 black peppercorns
  • 1 teaspoon whole cloves
  • 4 cardamom pods
  • 2 cinnamon sticks
  • 2 star anise
  • 1 kilogram sugar
  • 2 kilograms plums (dark red)
  • 21 fluid ounces white wine vinegar

Method

  • Turn the heat down to low & stir until sugar is completely dissolved.
  • Boil gently for 2 mins then add halved plums & simmer for 4-5 mins.
