I found this recipe in a Finnish magazine. When I made this I added the lime marinade into the other ingredients along with the fish - I thought it tasted good but bf found it had too strong a lime flavour so watch out. :) This gives about 4 portions.

Ingredients

Serves: 4

Metric Cups
  • 400 grams red fish
  • 50 millilitres lime juice
  • 1 teaspoon salt
  • 2 onions
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 can tomato
  • fish stock
  • dried chillies (or fresh)
  • 1 can coconut milk
  • 180 grams prawns
  • 1 handful fresh coriander (or parsley chopped)
  • 14⅛ ounces red fish
  • 2 fluid ounces lime juice
  • 1 teaspoon salt
  • 2 onions
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 can tomato
  • fish broth
  • dried chiles (or fresh)
  • 1 can coconut milk
  • 6⅓ ounces shrimp
  • 1 handful cilantro (or parsley chopped)

Method

  • Cut the fish.
  • Mix the salt with the lime juice and pour over the fish. Let the fish marinate.
  • Peel and chop the onion and garlic. Heat the oil in a pan, saute the onions a minute, add the tomatoes, fish stock cube, coconut milk and as much chilli as you want (one small red chilli was quite enough for us). Let simmer for about 10 mins.
  • Add the fish, let simmer for about 6 minutes.
  • Add the prawn and heat.
  • Sprinkle with parsley or coriander and serve with rice.
