Nina Lincoln's Chocolate Cheesecake

Introduction

This is one of the best chocolate cheesecakes I know. It's my boyfriend's speciality - one of the only things he likes to make. It doesn't really involve any baking as you only crumble the cookies, mix the other ingredients and freeze the whole thing. When you want to eat the cake, take it from the freezer about half an hour before. You can just take a few slices and then freeze the cake again - it doesn't seem to mind but don't do it many times. The cake can also be decorated, for example with whipped cream "flowers" and rasberries. The recipe is from a race driver's wife who gave it to their Finnish Au Pair (if I remember the story right :) and it has since ben published in a magazine and has become very popular. And 1 dl is of course 100 ml.

  • 9 large graham crackers (or digestive biscuits)
  • 35 grams butter
  • 200 grams dark chocolate
  • 200 grams cream cheese
  • 160 millilitres sugar
  • 1 teaspoon vanilla sugar
  • 2 eggs
  • 200 millilitres cream

  • 7 ounces bittersweet chocolate
  • 7 ounces cream cheese
  • 6 fluid ounces sugar
  • 1 teaspoon vanilla sugar
  • 2 eggs
  • 7 fluid ounces cream

Method

  • Line a spring form pan with greaseproof paper and spread the cookie and butter mixture on the bottom.
  • Melt the chocolate.
  • Mix the cheese and 1 dl sugar and the vanilla sugar.
  • Separate egg whites and yolks. Mix the yolks with the cheese mixture. Add the melted chocolate.
  • Whisk the whites in a separate bowl until the mixture is very stiff. Add 2/3 dl sugar and then add to the cheese and chocolate mixture.
  • Whisk the cream and add it to the other ingredients.
  • Pour the batter into the pan and put in the freezer.
