Ingredients

Serves: 18-20

Metric Cups
  • 50 millilitres sunflower oil
  • 150 grams caster sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 50 grams cocoa powder
  • ½ teaspoon baking powder
  • 80 grams plain flour
  • 1¾ fluid ounces vegetable oil
  • 5 ounces superfine sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 2 ounces unsweetened cocoa
  • ½ teaspoon baking powder
  • 3 ounces all-purpose flour

Method

  • Preheat the oven to 175degC
  • Mix together oil and sugar in a large bowl. Add the eggs and vanilla and stir until well blended.
  • Carefully add cocoa powder, flour and baking powder and mix well.
  • Grease a 20X20cm baking pan and pour the batter into the tin.
  • Bake for approx 15mins or until done - a skewer will come out with only a few moist crumbs.
  • Serve hot or cold, or even better with vanilla ice cream!
