Ingredients

Serves: 4

Metric Cups
  • 150 grams dark chocolate
  • 100 millilitres double cream
  • 100 grams unsalted butter
  • 100 grams soft dark brown sugar
  • 2 eggs (beaten)
  • 50 grams plain flour
  • 40 grams cocoa powder
  • 25 grams ground almonds
  • 5⅓ ounces bittersweet chocolate
  • 4 fluid ounces heavy cream
  • 3½ ounces unsalted butter
  • 3½ ounces soft dark brown sugar
  • 2 eggs (beaten)
  • 1¾ ounces all-purpose flour
  • 1⅖ ounces unsweetened cocoa
  • ⅞ ounce almond meal

Method

  • Heat the oven to 200c/400F/Gas 6
  • Melt chocolate over a pan of simmering water, stir in cream and chill in the fridge for 20-30 minutes.
  • Grease 4 individual pudding moulds with butter.
  • Beat together sugar and butter, then add the eggs gradually.
  • Sift in the flour, cocoa powder, and ground almonds and mix.
  • Half fill the pudding moulds with the mixture, then make a "well" in the middle of the mixture.
  • Put 1 teaspoon of the chilled chocolate in the well and top with remaining pudding mixture. Bake for 10-15 mins.
  • Serve with cream or ice cream.
