Ingredients

Serves: 4

Metric Cups
  • 150 millilitres natural yoghurt
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry paste
  • 1 pinch of chilli powder
  • juice of 1 lime
  • 1 clove garlic (crushed)
  • 4 chicken breasts (skinless, boneless)
  • 1 red pepper (or green, deseeded and cut into chunks)
  • 1 onion (halved and cut into chunks)
  • 5 fluid ounce natural yoghurt
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry paste
  • 1 pinch of chili powder
  • juice of 1 lime
  • 1 clove garlic (crushed)
  • 4 chicken breasts (skinless, boneless)
  • 1 red bell pepper (or green, deseeded and cut into chunks)
  • 1 onion (halved and cut into chunks)

Method

  • In a large bowl, mix together the first six ingredients.
  • Slash the chicken breasts 4 or 5 times without cutting all teh way through.
  • Put the chicken and vegetables in the marinade and coat everything completely. Leave in the fridge for 20 mins to infuse flavours.
  • Grill chicken and veg on a high heat until chicken is cooked through.
  • Leave to rest for 5 minutes, then serve with rice or naan breads.
