Sneaky Six Veg Red Pasta Sauce

A pasta sauce which is great for getting 6 kinds of veg into kids with their favourite pasta. Its blended smooth so they will never know whats in it. Makes 2 batches to feed 4 so you can freeze half but you do need a big pan.

Ingredients

Serves: 4 - 8

Metric Cups
  • 3 sticks celery (inner stalks)
  • 1 red pepper
  • 1 yellow pepper (or orange)
  • 1 onion
  • 2 cloves garlic
  • 3 medium carrots
  • 800 grams tinned tomatoes (drained)
  • 1 litre tomato passata
  • 1 teaspoon oregano
  • 1 teaspoon fresh basil (or thyme)
  • olive oil (a little)

  • 1 onion

  • 28¼ ounces tinned tomatoes (drained)
  • 1⅘ pints tomato passata
  • 1 teaspoon oregano
  • 1 teaspoon fresh basil (or thyme)
  • olive oil (a little)

Method

Sneaky Six Veg Red Pasta Sauce is a community recipe submitted by Liza-Jane and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Chop all the vegetables (doesn't have to be really small) and fry for about 5-10 mins in olive oil until beginning to soften.
  • Add the tinned tomatoes and fry for another couple of mins then add the passata and herbs.Cover and simmer for at least half an hour - more if possible. Stir occasionally.
  • When the veg if softened, especially the carrots take off the heat and blend ( I use a stick mixer as I haven't got anything else but probably a food processor is better) until smooth.
