Melt the butter and cook the mushrooms on both sides until cooked through. Remove, drain and keep warm. Sweat the onion and garlic for a couple of minutes until soft. Add the bacon and fry until crispy. Arrange the mushrooms on a baking sheet and top with the bacon mixture. Top with the cheese and grill until golden brown. Serve with crusty brown bread.
I have just thought of doing this on Saturday as a starter.
- 4 large portobello mushrooms
- 1 knob of butter
- 2 small finely chopped shallots
- 1 clove minced garlic
- 6 rashers bacon (cut into strips)
- 3 ounces mature cheddar
