Baked Mushrooms

Introduction

I have just thought of doing this on Saturday as a starter.

Ingredients

Serves: 2

  • 4 large portobello mushrooms
  • 1 knob of butter
  • 2 small finely chopped shallots
  • 1 clove minced garlic
  • 6 rashers bacon (cut into strips)
  • 3 ounces mature cheddar

Method

  • Melt the butter and cook the mushrooms on both sides until cooked through.
  • Remove, drain and keep warm.
  • Sweat the onion and garlic for a couple of minutes until soft.
  • Add the bacon and fry until crispy. Arrange the mushrooms on a baking sheet and top with the bacon mixture.
  • Top with the cheese and grill until golden brown. Serve with crusty brown bread.
