Introduction

A savoury pumpkin side dish, perfect for autumn. This is a great side to any roast -- absolutely sumptuous with pork or lamb. This recipe is from John Thorne, author of Simple Cooking. The pumpkin absolutely melts in your mouth.

Ingredients

  • 8 cups pumpkin (cut into 1 inch chunks)
  • flour
  • 1 pinch of salt
  • freshly ground pepper
  • ⅓ cup grated Parmesan cheese
  • 1 clove minced garlic
  • ⅓ cup olive oil

Method

  • Preheat oven to 400 degrees F. Butter a 13 x 9 inch baking dish.
  • Dredge pumpkin in a bag with flour, salt and pepper; shake off excess.
  • Put in the prepared baking dish and sprinkle with Parmesan and garlic; add more pepper to taste and drizzle with oil.
  • Bake for 30-40 minutes, or until absolutely tender -- almost molten.
