Everyone loves a chocolate pudding, and most of us love (nice) surprises - this deliciously combines both and is a dinner party show stopper.

Metric Cups
  • 100 grams dark chocolate
  • 2 tablespoons butter (melted)
  • 100 grams caster sugar
  • 100 grams butter (softened)
  • 3 medium eggs (separated)
  • 100 grams plain flour
  • ½ teaspoon baking powder
  • 50 grams ground hazelnuts
  • white chocolate (about 18 squares)
  • 3½ ounces bittersweet chocolate
  • 2 tablespoons butter (melted)
  • 3½ ounces superfine sugar
  • 3½ ounces butter (softened)
  • 3 medium eggs (separated)
  • 3½ ounces all-purpose flour
  • ½ teaspoon baking powder
  • 1¾ ounces hazelnut meal
  • white chocolate (about 18 squares)

Method

  • Preheat oven to 180c/gas mark 4 Melt chocolate in a bainmarie. Brush 6 x ramekins with melted butter, tip in ground hazelnuts then shake excess back into a bowl.
  • Beat softened butter and sugar in a large bowl until light and fluffy. Add melted chocolate and mix well. Add egg yolks one at a time, beating well each time. Sift in the flour, baking powder, and ground hazlenuts.
  • In another bowl, whisk egg white until they form stiff peaks. Stir 2 tablespoons or so egg white into the chocolate mixture, then carefully fold in the rest. Divide three quarters of the mixture into the ramekins.
  • Push three chocolate squares into each ramekin dish, and spoon an equal amount of the rest of the chocolate mixture over the top of each ramekin. Bake on a baking sheet for 15 minutes.
