Introduction

These are almost cake-like. Icing is not necassary, but is often desired. I will usually glaze them with confectionary sugar mixed with fresh citrus juices. These will puff up so don't cut them with intricate cutters; simple shapes work best.

Ingredients

Serves: 12

  • 1 cup shortening
  • 2 cups granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon fresh, grated nutmeg
  • 6 cups sifted cake flour
  • 1 cup milk

  • In a large bowl, sift together flour with baking powder, salt, baking soda, and nutmeg; set aside.
  • In another bowl, cream shortening with sugar until fluffy.
  • Add eggs, one at a time, beating well after each.
  • Stir in vanilla extract.
  • Add flour mixture alternately with milk, beginning and ending with flour mixture.
  • Chill dough at least 2 hours.
  • Divide into fourths and work with one portion at a time, keeping the rest chilled.
  • Roll dough on floured surface to a quarter inch thick.
  • Cut into desired shapes.
  • Place on baking sheet and bake at 325 degrees for 10 to 12 minutes, just until edges are blonde.
  • Cool slightly before removing from baking sheet. Cool completely before icing.
