Ingredients

Serves: 6

Metric Cups

For the Cakes

  • 3 eggs
  • 150 grams icing sugar
  • 2 tablespoons vanilla sugar
  • 10 tablespoons cake flour
  • 4 tablespoons potato flour
  • 1 teaspoon baking powder (a flat teaspoon)

For the Stuffing

  • 800 grams strawberries
  • 200 millilitres orange juice
  • 400 grams sugar
  • 2 gelfix (super, 3:1)

For the Decoration

  • crystal sugar
  • 6 strawberries

For the Cakes

  • 5⅓ ounces confectioners' sugar
  • 2 tablespoons vanilla sugar
  • 10 tablespoons cake flour
  • 4 tablespoons potato flour
  • 1 teaspoon baking powder (a flat teaspoon)

For the Stuffing

  • 28¼ ounces strawberries
  • 7 fluid ounces orange juice
  • 14⅛ ounces sugar
  • 2 gelfix (super, 3:1)

For the Decoration

  • crystal sugar
  • 6 strawberries

Method

Strawberry Cakes is a community recipe submitted by Martin The Cook and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Whip the eggs with vanilla sugar, icing sugar and 5 tbsp of hot water, add both flours and stir, pour the dough into a baking form 30x 40cm with baking paper on the bottom.
  • Bake 10-12m in 200C. Take out the sponge cake on a cutting board sprinkle with crystal sugar, baking paper sprinkle with water and take it off, kek's form fill with aluminium foil, cut the cake in rectangles 2 of side of form size, and 2 of bottom size, sides and bottom of form fill up with dough, leave 1rectangle. Strawberries mix and rub through the sieve, stir with orange juice and cook it, keep stirring and add gelfix and sugar keep cooking 2m.
  • pour it all on a cake, press in 6 strawberry's in side the mixture cover it with the last rectangle of sponge cake leave it to cool down.
